Guinness cupcakes 

To celebrate St Patrick’s day this weekend I made these rich dense cupcakes using Guinness . Served with ice cream or whipped cream they are perfect served as a dessert. 

Ingredients 

100g softened butter

160g  light brown sugar

1 egg

100g self-raising flour

50g ground almonds

3ml bicarbonate of soda

60ml cocoa powder 

150ml Guinness

Ice cream , cream and caramel sauce for serving 

Method 

Combine all the ingredients in the bowl of the electric mixer . With the K beater, beat until well combined. Divide the mixture into 8 well greased  muffin cups. Bake at 180C for 15-20 minutes or until a toothpick inserted into the cakes comes out clean. Cool slightly. 

Serve warm with ice cream or whipped cream and drizzle with caramel sauce.
