Raspberry, chicken salad with raspberry vinaigrette 

Raspberries are wonderful used in savory dishes . They add a tart balance and pops of wonderful color to dishes . This salad can be adapted to use whatever ingredients you have on hand . The chicken can also be replaced with prawns or left out for a vegetarian version . 



60ml raspberry puree

30ml raspberry vinegar

30ml lemon juice

120ml olive oil

15ml honey

10ml Dijon mustard

Salt and pepper


Mixed leaves

Shredded chicken

Fresh raspberries

Mixed peppers



Pomegranate rubies


Dressing: Combine all the ingredients in a jug and use a stick blender to emulsify the mixture. Taste and adjust the balance to your taste.

Salad. Arrange the ingredients of your choice on a serving platter and drizzle with the dressing before serving.
