Turkish delight valentine cupcakes 

Spoil your valentine with these easy Turkish delight cupcakes. They are light and fluffy . Filled with raspberry jam and glazed with pink glacé icing. If you don’t have heart shaped molds you can bake them in a sheet pan and cut out shapes with a heart shaped cutter. 


Makes 12

2 eggs

250ml castor sugar

125ml oil 

5ml rose essence

375ml flour

5ml baking powder

2ml bicarbonate of soda 

150ml buttermilk

125ml raspberry jam

Pieces of Turkish delight to decorate 


375ml icing sugar

30ml lemon juice

3ml rose essence

Water to mix

Pink food coloring 


Best the eggs and sugar until light and fluffy . Beat in the oil  and essence . Sift the flour, baking powder and bicarbonate of soda . Add to the egg mixture alternately with the buttermilk and mix until blended . Fill cupcake molds about 3/4 fill. Bake at 180C for 20-25 minutes until golden in color. Remove and cool for 10 minutes before turning out. Cool completely . Split in half and spread with raspberry jam. Prepare the icing and spoon over the top letting the icing drip over the sides . 

Icing: put the icing sugar in a bowl. Add the lemon juice and essence and enough water to make a thick but portable icing. Add a few drops of food coloring . Pour over the cakes and decorate with a slice of Turkish delight .
