I just love the wonderful new varieties of potatoes available at the moment. Using “Magenta Love “ and “Double Fun” I made this pink and purple potato salad. If you can’t get pink and purple potatoes just use regular potatoes or even baby potatoes will work well.
300g of Magenta Love potatoes
300g Double Fun potatoes
1 red onion, finely chopped
2-3 large gherkins, finely chopped
Salt and pepper
60ml plain yoghurt
30ml lemon juice
45ml chopped dill
Put the potatoes in a pot and cover with cold water. Bring to the boil and simmer until the potatoes are cooked. Test by piercing with the point of a knife. Drain and allow to cool enough to handle. Remove the skins and cut into largish chunks. Place in a bowl and season.
In a jug combine the yoghurt, mayonnaise, lemon juice, dill and seasoning. Mix well.
Pour over the potatoes and mix gently until well combined.
Tip: If you ever confused about what vegetables should be cooked in cold water and which in hot water. The rule of thumb is: if it grows below the ground then cook it in cold water if it grows above the ground cook it in boiling water.
