Cheesecake brownies


Can’t choose between having a chocolate brownie or a piece of cheesecake, well with this recipe you get have both. A lovely gooey chocolate base topped with a creamy cheesecake layer. Really decadent.


Makes about 30


200g dark chocolate

200g butter

3 eggs

300ml castor sugar

5ml vanilla essence

250ml flour

Cheesecake mix

500g cream cheese

125ml castor sugar

2 eggs

5ml grated lemon rind

50g pecan nuts chopped


Line a 18x27cm brownie pan with non stick baking paper.

Combine the chocolate and butter in a glass bowl and microwave on a medium setting for about 2 minutes until the chocolate and butter have melted. Set aside to cool.

Beat the eggs, castor sugar and vanilla well.

Add in the melted chocolate and mix . Add the flour and mix to combine.

Pour into the prepared tin.

Cheesecake mix: Combine the cream cheese, sugar, eggs and lemon rind with an electric mixer until well blended. Carefully pour this over the chocolate mixture. Sprinkle the chopped nuts ontop.

Bake at 160C for 50-60 minutes until the cheesecake mixture is set and a skewer inserted into the mixture comes out clean. Switch off the oven and leave the pan in the oven for another 30 minutes. Remove from the oven and cool completely before cutting into squares.
