Rice and Lentil ( Mujadara ) 

After a hard day, this is my best comfort food dish to make. Quick and easy to prepare and always makes me think of my mom. Her mujadara is delicious. We have been eating this dish for years, a family favourite!


Serves 4

250ml long grain basmati rice
375 ml water
5 ml salt
400g tin organic lentils, drained and rinsed
30 ml olive oil
2 large onions , red or white , peeled and thinly sliced
1 large clove of garlic , crushed
45ml chopped Italian parsley

Put the rice and water into a pot with the salt . Bring to the boil then turn down the heat and simmer covered until the water is almost absorbed . Stir through the lentil cover and gently summer for another 10 minutes. Turn off the heat and set aside covered for another 5 minutes.
In a frying pan heat the olive oil and fry the onions over a low heat until really soft . Stir in the garlic and cook for another 5 minutes . Stir the onions into the rice and lentils and add the parsley just before serving .
