With avos now in season, Guacamole is one of my favorite dishes to make. Served as a dip or an accompaniment to something like pulled pork or a simple baked potato. And of course, don’t forget nacho chips covered in melted cheese!
2-3 avos peeled and cubed
1 small red onion, finely diced
1 large ripe tomato, seeded and finely diced
About 15ml lemon juice
5ml chopped garlic
Salt and black pepper
60ml chopped coriander 
If you like your guacamole spicy add a deseeded and chopped red chili.
Mix all the ingredients gently together until well blended without mashing the avos too much. You can use a fork or a food processor, depending on the consistency you want. Adjust seasoning to taste. Enjoy.
