Asparagus with homemade hollandaise sauce

This is a classic combination. Don’t be afraid to make your own hollandaise, this method uses a food processor, making it much less risky. Give it a try!
Ingredients
1 -2 bunches of asparagus
Cook the asparagus in boiling water for about 10 minutes until just tender.
Hollandaise sauce 
4 egg yolks
200g butter
50 ml lemon juice

Salt and pepper
Method
Place the egg yolks into the food processor. Add the lemon juice and blend well. Put the butter into a small pot and allow it to melt. As soon as the mixture comes to the boil. Remove and with the processor running pour in the hot butter. Blend until thick and smooth. Season to taste.  This can be prepared in advance and kept warm by placing it over some hot water . Spoon the sauce over the asparagus and serve.
