A healthier potato salad

healthy potato salad

Love potato salad but not crazy about all the mayo, then this one is for you.
300g baby potatoes
60ml chopped dill
30ml chopped parsley
Salt and pepper
125ml olive oil
60ml lemon juice
10ml chopped garlic 
10ml honey

Boil the potatoes until just soft. Drain and cut the potatoes in half. Place in a bowl. Pour over the dressing while still warm. Mix through the herbs. Season with salt and pepper and serve at room temperature.
Dressing: combine the olive oil, lemon juice, honey, garlic, and seasoning together in a screw top jar and shake until well combined.
